Sauerkraut

TLDRLast updated 4 September 2026

Half a cup of sauerkraut, 75 g, is rated green, and the group deciding that is mannitol at 0.2 g, sitting right on the line where mannitol begins to count. Fructans are the usual suspicion with anything made of cabbage; here they are the quieter half of the reading. Half a cup is also the only amount tested, so it is a known quantity in a way a heaped plateful is not.

Is sauerkraut low FODMAP?

Mannitol is a sugar alcohol the small intestine takes up slowly and only partly, so the remainder travels on holding water with it. The useful comparison is weight for weight against raw cabbage, which records 0.08 g of mannitol in the same 75 g while sauerkraut reads more than double. Souring has not conjured a polyol out of nowhere. Salting pulls water out of the shredded leaf and the jar is packed down hard, so a given weight of kraut represents considerably more cabbage than the same weight of loose raw shreds. Fructans sit at 0.1 g, on the mark where they start to register.

Sauerkraut and IBS: what to know

Half a cup is far more sauerkraut than most people eat at once, which is the comfortable part of this entry. A forkful beside sausage and potato, or a tangle in a sandwich, sits well inside the serve. Mannitol is better tracked across a whole day than on one plate, because it is the group that also caps cauliflower and button mushrooms, and a single dinner can gather all three without any one of them going over. The brine deserves a mention too: it is sharp and very salty, and reflux takes no notice of a FODMAP rating.

Gut-friendly ways to eat sauerkraut

Keep it in the condiment role and it looks after itself. Drain a forkful onto a hot dog, fold it through potato salad, or press it into a toasted cheese sandwich where the sourness does the work mustard usually would. A slow braise is where the half cup disappears, since the pot reduces and nobody serves choucroute by the spoonful. Read the jar as well, because some are made with apple or wine, which brings a different FODMAP group along with it. Kimchi is the other fermented cabbage in the guide, and a different group sets its ceiling.

Frequently asked questions

How much sauerkraut can I eat on a low FODMAP diet?

Half a cup is the measured serve and it comes back green, so a normal condiment helping is comfortably covered. There is no second tested point, which means a bigger pile is untested rather than known to be a problem. If you eat it daily, the sensible approach is to keep to the measured amount and watch what else on the plate brings mannitol.

Why does sauerkraut make me bloated if it is low FODMAP?

Two things can do it at a green serve. Mannitol draws water into the bowel before bacteria get to it, and it is already at the level where the group starts counting, so a heavy hand tips it over. The other is cabbage fibre, which produces wind in anyone. Neither shows up as a red rating, and both respond to a smaller forkful.

Is raw sauerkraut different from the pasteurised jars?

Not in these figures. Our number describes cabbage soured in salt, and nothing in the data separates a refrigerated raw jar from a shelf-stable pasteurised one. What genuinely varies is what else went in, so check the label for wine, apple, juice or a long list of vegetables, since those additions are not part of what was measured.

Is sauerkraut or cabbage better for IBS?

Both have a green serve, so it is not really a contest. Gram for gram, sauerkraut carries the heavier mannitol load, but you eat it by the forkful while cabbage turns up as a side dish, so the kraut usually costs less over a meal. Choose by how you want to eat it rather than by which is fermented.
