Rice is almost entirely starch, and starch is a long-chain carbohydrate that human enzymes handle in the small intestine. FODMAPs are the short-chain ones that slip past digestion and reach the bacteria further down, and milled white rice has effectively none of them left to give. Nearly every rice dish that causes trouble does so through its flavourings. Fried rice starts with onion and garlic, risotto is built on onion stock and carries a red rating in the guide, and most bottled curry and stir-fry pastes lean on both. Build on garlic-infused oil, ginger, chilli, spring onion greens and tamari instead, and let the grain stay plain. Brown rice keeps the bran and delivers noticeably more fibre, which helps if constipation is your main symptom and can feel rough if diarrhoea is. White rice is the gentler option during a flare, and there is no FODMAP penalty for choosing it.
Can white rice cause bloating?
