Is brussels sprouts low FODMAP?
Sprouts are unusual in carrying four FODMAP groups in meaningful amounts at the same time. At two sprouts every figure is small: 0.12 g of fructans, 0.1 g of GOS, 0.08 g of sorbitol and 0.05 g of mannitol, and that serve rates green. Roughly double the portion and each figure roughly doubles, yet even at five or six sprouts the fructans stop just short of the 0.3 g high mark and the sorbitol just short of 0.2 g. The rating reflects the total, because your gut does not sort FODMAPs into separate queues.
Brussels Sprouts and IBS: what to know
Sprouts make a poor test food. A reaction to five of them tells you nothing about which group caused it, since you have taken fructans, GOS and two polyols in one mouthful; if you are working through reintroductions, test each group with something that carries only that group. They also rarely arrive alone. On a roast dinner the stuffing and the gravy usually bring onion fructans of their own, and the gut reads the plate as one dose rather than as separate vegetables.
Gut-friendly ways to eat brussels sprouts
Two or three sprouts is a real serve if the rest of the plate carries the volume. Halve them so they look like more, roast them hard so each one tastes of something, and fill the space around them with green beans, carrot, parsnip and potato, all rated green in this guide. Some wind is ordinary fermentation of sprout fibre, which happens even at the green serve and is not a sign you have overdone it.
Can I eat Brussels sprouts at Christmas dinner?
Yes, at two or three, provided you spend the rest of your FODMAP budget carefully. Sprouts are rarely the whole problem at a roast: onion in the stuffing and gravy, wheat in the bread sauce and a generous serve of everything are usually stacked on top of them. Helping yourself to the sprouts first, before they are drowned in sauce, keeps the portion honest.
Does boiling Brussels sprouts lower their FODMAPs?
A little, but not enough to move a serve. Fructans and GOS dissolve in water, so some leaches into the pot and gets poured away; heat itself breaks nothing down, and the polyols stay put. Boiled, roasted and steamed sprouts are all counted the same at the same weight, so the number on your plate is what decides the rating.
