Is beef stock/broth (commercial) low FODMAP?
Reduction is a concentration step. Water leaves as steam and fructans do not, so a cup boiled down to a quarter of its volume still holds the 0.75 g it began with, now in a few spoonfuls of sauce going over one plate. Heat will not break them apart either, which is why a braise that has ticked over for three hours is no gentler at the end than at the start. Is beef gravy low FODMAP?

Homemade gravy is a different proposition, because you choose the liquid. Pan juices, water, a thickener and a low FODMAP stock give you the same glossy brown sauce with no allium base underneath it.
Does reducing stock make it higher in FODMAPs?
Per spoonful, yes. Boiling removes water and leaves everything dissolved in it behind, so a sauce reduced by half is roughly twice as concentrated as what went into the pan. The total is unchanged, which is the part people miss: you are not cooking the fructans off, you are packing them into a smaller ladle. A pan sauce taken all the way to a syrup is the extreme version of this.
Can I use beef stock in a stew or slow cooker?
Not the commercial kind, since eight hours of gentle heat will not soften what the carton starts with, and there is nothing to strain because the liquid is the dish. A stew is one of the easier places to switch, in fact. Long cooking draws so much flavour out of the meat and the carrot that a plain low FODMAP base is barely noticeable by the time it reaches the bowl.
What can I use instead of beef stock?
Cook a spoonful of tomato paste out in the pan until it turns brick red, add a bay leaf, and give it time, since long cooking of the meat itself does much of the work the stock was hired for. A certified low FODMAP stock is the direct swap when a recipe wants litres of liquid, and a homemade batch will sit in the freezer for months.
