Is okra low FODMAP?

Okra carries fructans and GOS in modest amounts, and the story is how fast they double. Three pods hold 0.06 g of fructans and 0.05 g of GOS, each sitting under the 0.1 g point where a group starts to matter. Two and a half times the pods lifts fructans to 0.15 g and GOS to 0.13 g, both now past that point, and the rating goes red. The mucilage okra is famous for, the slippery thread that thickens a pot, is a soluble fibre and not one of the six groups measured here, so sliminess and symptoms are unrelated.

Okra and IBS: what to know

Okra rarely arrives on its own. It is in a gumbo with a roux, in bhindi masala with garlic and tomato, or in a stew where it does the thickening, and in all three the pods go in by the ladle rather than the handful. Okra water, the overnight soak people drink for its slipperiness, works against you for the same reason boiling helps: fructans and GOS dissolve, so what leaves the pods ends up in the glass. When you cook okra yourself the pods are usually the easiest part of the dish to ration, and the base is the part worth rebuilding.

Gut-friendly ways to eat okra

Three pods still read as okra if you slice them thin on the diagonal and thread them through the pot instead of filling it. For the rest of the volume, eggplant takes on a stew the same way and holds its green rating at half a cup cubed, and green beans put a green pod on the plate at three-quarters of a cup. Where the okra was doing the thickening, a spoonful of cornflour slaked in cold water covers it. Build the base on infused oil and a low FODMAP stock so the ration you set for the pods is the one that counts.

Pod size varies a lot, so weight is the more honest measure than the count: three large pods from a market bunch can weigh what five small ones do, and the rating follows the grams.

Is gumbo low FODMAP?

Usually not, and the okra is only part of it. The trinity most recipes start with is onion, celery and green capsicum, and two of those three come with portion problems of their own before a single pod goes in. A bowl also holds well past the green amount of okra. Rebuilt with capsicum, spring onion greens and a low FODMAP stock, and with the pods rationed, a gumbo is possible.

Is frozen okra the same as fresh?

Yes by weight, since freezing leaves fructans and GOS untouched. Frozen sliced okra is harder to portion, though, because you are pouring from a bag rather than counting pods, and 75 g of slices is a small scoop. Pickled okra is a different question with no tested figures here, so treat a jar as untested rather than assuming the fresh numbers carry over.

Why does okra cause gas and bloating?

Both of its FODMAP groups reach the large bowel undigested and are fermented there, which produces gas in anyone, not only in people with IBS. Okra also brings a lot of soluble fibre, and that ferments too. At three pods the load is small enough to pass quietly for most people; at a full bowl of stew the fructans, the GOS and the fibre are all being handled at once.
