Is millet low FODMAP?

One group registers and it barely counts: 0.02 g of fructans in the cooked serve, a fifth of the 0.1 g at which a portion begins rating moderate, with excess fructose, lactose, GOS, sorbitol and mannitol all sitting at zero. Millet is also where the usual botany argument stops working. Quinoa and buckwheat come in low partly because neither is a grass at all, whereas millet is one, a true cereal like wheat, and it still arrives almost empty. For comparison, half a cup of cooked couscous, 78 g, carries 0.12 g.

Millet and IBS: what to know

Millet is not one plant. Pearl millet, sold as bajra, finger millet, sold as ragi, and foxtail and proso millet are separate crops grown across India and West Africa, and this guide rates them together. The trap worth naming is bread. A loaf described as millet bread is nearly always wheat flour with millet seed scattered through it, so the grain named on the crust is not the grain doing the work. Puffed millet and millet flour are separate products again, and neither has a tested serve here.

Gut-friendly ways to eat millet

Toast the dry seeds in the pan for a minute before the water goes in and millet behaves like couscous: one part grain to two parts water, lid on, about fifteen minutes, then off the heat to steam and forked through at the end. Raise the liquid to three or four parts and stir it, and the same seed collapses into a soft porridge, which is how much of the world eats it for breakfast. Cooked millet firms up as it cools, so a trayful can be sliced and pan-fried the way polenta is.

How do you cook millet so it isn’t mushy?

Keep the water down and leave it alone. One part millet to two parts water, brought to the boil then covered on the lowest heat, gives separate grains in about fifteen minutes, and stirring is what breaks them down. Toasting the dry seed first helps as well, and so does resting the covered pan off the heat for five minutes before a fork goes anywhere near it.

Is millet gluten free?

Yes. Millet is a cereal grass, unlike quinoa and buckwheat, but it belongs to a different branch from wheat, barley and rye and contains no gluten. That is why it turns up as a gluten-free flour. If you have coeliac disease the packet is still worth reading, since millet is often milled and packed alongside wheat and shared-line warnings are common.

How much millet can I eat on a low FODMAP diet?

Three quarters of a cup cooked is the only measured amount, and it comes back green with a trace of fructans behind it. Above that the data simply runs out, which is not the same thing as a warning. In practice millet is filling and reasonably high in fibre, so appetite tends to set the portion before anything else does.

Can I use millet instead of couscous?

It is the closest swap here for texture, provided you cook it the dry way. Millet is smaller and rounder than couscous, tastes faintly of sweetcorn, and takes the same lemon, herbs and roasted vegetables without complaint. Quinoa is the other candidate and holds a green rating at a full cup cooked, 155 g, which is a larger portion than millet has been measured at.
