Is high fructose corn syrup (hfcs) low FODMAP?
Corn starch contains no fructose whatsoever; the fructose is put there. Manufacturers break the starch down into glucose, then use an enzyme to convert part of that glucose into fructose, and stop wherever they want the sweetness to land. The grade used in soft drinks sits at roughly fifty-five per cent fructose against forty-two per cent glucose, and the two sugars float loose rather than bonded, so nothing holds them to a matching pair. Fructose that has no glucose to travel with is absorbed slowly, and the remainder ferments. That is the 2.5 g.

The trouble is volume, not the spoon. This is a drinks ingredient before it is a kitchen one, and nobody measures a can of soft drink: cola sweetened with corn syrup is rated red, while the cane sugar version of the same drink is rated green. It also arrives quietly in sliced bread, breakfast cereal, flavoured yoghurt, salad dressing, sweet-and-sour and barbecue sauces, juice drinks and cereal bars, which adds up to a lot of small doses across a day that never tasted sweet enough to notice.

Reading the label is the whole skill, and the wording moves by country: high fructose corn syrup, HFCS 42 or HFCS 55 in North America, and glucose-fructose syrup almost everywhere else, with isoglucose the term European regulation uses. One similar name is a different ingredient entirely. Glucose syrup, sold as corn syrup in American baking aisles, has had none of its glucose converted and is rated green. For sweetening at home, plain sugar works, golden syrup and rice malt syrup are rated green, and maple syrup covers anything you would have poured.

Is high fructose corn syrup worse than sugar for IBS?
On FODMAPs, yes, and this is one of the few cases where the processed ingredient genuinely does behave differently from the traditional one. Sugar delivers its glucose and fructose bonded in matching amounts, so nothing is left over. Corn syrup delivers them loose and fructose-heavy, so a surplus reaches the large bowel and ferments there. That is why the tablespoon is red and a spoon of sugar is not.
What is high fructose corn syrup called on ingredient lists?
In North America: high fructose corn syrup, HFCS, HFCS 42, HFCS 55, or corn sugar. Elsewhere: glucose-fructose syrup or fructose-glucose syrup, and isoglucose in European regulatory wording. Fruit juice concentrate does much the same job under a friendlier name. Plain corn syrup, listed here as glucose syrup, is a separate product with a green rating, so the word corn on its own tells you nothing.
How much high fructose corn syrup is OK with IBS?
