Is falafel low FODMAP?
Falafel begins with dried chickpeas that are soaked and minced raw, shaped, then fried, and at no stage is any liquid poured away. Canned chickpeas are rated green at a quarter cup, 42 g, on 0.18 g of GOS, because months in brine draw much of that water-soluble sugar chain out of the bean and into the liquid you tip down the sink. A fryer offers no equivalent escape route, and four balls represent a great deal more chickpea than a quarter cup does. Fructans reach 0.6 g on top, twice their own high mark, with the onion and garlic in the mix adding to what the legume already brings.
Falafel and IBS: what to know
Four balls is a modest order. A wrap is usually built on five or six of them, and a mezze plate arrives with more again beside the dips, so the tested amount describes the floor of a normal serving rather than its ceiling. Even a couple of balls picked off someone else’s plate carry more GOS than a green serve of drained chickpeas. Because GOS is fermented in the large bowel instead of being absorbed, the wind and pressure tend to turn up in the evening after a lunchtime wrap, which is how falafel keeps getting acquitted week after week.
Gut-friendly ways to eat falafel
At the counter, the workable orders come off the grill: a shawarma plate is rated amber, and asking for extra salad and rice in place of the dips keeps the legume load down. Baba ganoush is the green dip on that bench, while hummus is rated amber at 2 tablespoons and red at a 100 g scoop. Four balls is the only measured amount and it is rated red, so there is no green portion to aim at. Nothing smaller has been tested, which means one ball is a guess rather than a known quantity. During strict elimination falafel is best left off the list entirely, and afterwards it belongs in a deliberate reintroduction test for GOS rather than in a Friday lunch.
Why is falafel high FODMAP when canned chickpeas are low FODMAP?
Two things stack up. The chickpeas in falafel are dried ones, soaked and ground raw, so none of their GOS has ever left in a brine, and the patties then pack far more chickpea into a serving than a spoonful of drained tin does. Add the onion and garlic worked through the mix and you have a red rating built from a green ingredient.
Is baked falafel lower FODMAP than fried?
No. Baking swaps deep oil for an oven and changes the fat, not the carbohydrate, and GOS survives both intact. There is one honest advantage: a very oily meal can set off IBS symptoms on its own terms, so an oven tray is easier on that front. The FODMAP figure stays exactly where it was.
What can I order instead of falafel at a kebab or wrap shop?
Grilled meat with salad and rice is the reliable order, and a plain shish kebab is rated amber rather than red. Ask for the sauce on the side, since garlic sauce and toum are built on raw garlic. If you want a vegetarian plate, chips, salad, olives and baba ganoush get you a real meal, and skipping the hummus tub matters more than skipping the pita.
