Is endive (belgian/witlof) low FODMAP?
Bitterness is not a FODMAP, and witlof makes that point better than any other vegetable. The tested leaves hold 0.05 g of fructans, half the 0.1 g mark where fructans start to count, and lactose, excess fructose, GOS, sorbitol and mannitol all sit at zero. The suspicion people bring to it is understandable, because this is chicory. The very same plant, grown for a fat pale root instead of a leafy head, gives us chicory root fibre, which is rated red at one teaspoon on 3.5 g of fructans. Root and shoot are not one food.
Endive (Belgian/Witlof) and IBS: what to know
The leaf is rarely the question. What it is dipping into usually is, and endive tends to appear on a table beside hummus, which is rated amber even at its small serve on 0.5 g of GOS, or beside a caramelised onion dip that carries far more than the scoop ever could. Bitterness is worth understanding too, since it is not distributed evenly: the dense core at the base of the head is where it concentrates and the outer leaves are mildest. If you gave up on endive over the taste rather than over symptoms, cut the core out in a wedge and try it again.

Let the leaves be the vehicle. They hold whipped feta with lemon, goat cheese and herbs, tuna and mayonnaise, or chopped tomato and olives, and they do it with no flour involved anywhere. Rice crackers are the other option, rated green at six to eight, but they go soft the second anything wet lands on them and a leaf does not. Endive also cooks beautifully: halve the heads lengthways, brown the cut faces in butter with a pinch of sugar, then let them braise until they slump, and the bitterness turns sweet and nutty.

Is endive the same as chicory or witlof?
The pale torpedo-shaped head goes by all three names, plus Belgian endive and chicon, and this entry covers it. Two relatives are not covered: curly endive, sold as frisée, and the broad-leaved escarole, both of which are different leaves grown differently even though the shops muddle the labels. If you are buying by name rather than by sight, look for the tight cream head with yellow or red tips.
What can I use instead of crackers for dips?
Endive leaves are the closest thing to a spoon that grows on a plant, and five or six of them is a green serve. Beyond that, cucumber cut into thick coins, carrot batons, strips of red capsicum and rice crackers all work. The scoop is usually the easy half of the problem, though. Whatever it is going into deserves the harder look, especially anything built on beans or onion.
How many endive leaves can I eat?

Is cooked endive low FODMAP?
Nothing in the tested figure changes with heat, since fructans are heat-stable and only 0.05 g of them was there to begin with. The classic braise is the thing to watch instead: endive is traditionally cooked with ham and a béchamel, sometimes in stock, and a commercial stock cube is frequently built on onion. Braise the halves in butter, water and a little sugar and the dish stays as quiet as the leaf.
