Couscous (wheat)

TLDRLast updated 3 September 2026

Couscous is not a grain in its own right. It is durum wheat semolina rolled into tiny pellets and steamed, which makes it pasta in another shape, and its FODMAP behaviour follows pasta rather than rice. Half a cup cooked (78 g) is rated green. A full cup cooked (156 g) is amber, carrying 0.24 g of fructans.

Fructans reads high on its own limits here, even though 0.5 cups is rated low overall. The rating comes from testing the serving as a whole. If that group is one you react to, treat this portion with more caution than the rating alone suggests.

Is couscous (wheat) low FODMAP?

Fructans are the group doing the work, as they are in everything made from wheat. The green half cup holds 0.12 g of them and the full cup 0.24 g, which stays below the 0.3 g mark where a portion is rated high, so the larger serve lands on amber instead of red. GOS trails behind at 0.05 g and 0.1 g. Line those figures up against wheat pasta, green at half a cup cooked and amber at a full cup on 0.28 g of fructans, and the family resemblance is exact.

Couscous (wheat) and IBS: what to know

The catch is how couscous gets served. Nobody plates half a cup of it: it goes down as a bed under a tagine, or as the bulk of a tabbouleh, and it swells and soaks up sauce in a way that makes a heap look modest. Steaming it in stock is the other quiet problem, since commercial cubes and cartons are usually built on onion. The figures here describe plain fine couscous cooked in water; wholemeal and pearl versions are different products with no tested serve of their own.

Gut-friendly ways to eat couscous (wheat)

Amber is a portion instruction, not a ban. Measure the green half cup, then make the plate substantial with things that carry no fructans: roasted zucchini and capsicum, olives, feta, preserved lemon, toasted almonds and a great deal of parsley and mint. When you want a full bowl and no arithmetic, quinoa is rated green at a whole cup cooked and takes the same seasoning almost invisibly. Cook either one in water with garlic-infused oil and lemon rather than a stock cube, and the flavour arrives without the onion.

Frequently asked questions

How much couscous can I eat with IBS?

Half a cup cooked is the green serve and one cup is amber, which means moderate rather than off limits. If wheat fructans came back as a trigger during reintroduction, stay at the half cup and build the plate out around it. If they did not, the amber cup is a reasonable dinner for most people. Measure it once so you know what each portion actually looks like.

Is couscous a grain or a pasta?

Pasta, technically. It is made by moistening durum wheat semolina and rolling it into granules, the same flour and much the same process behind dried wheat pasta, only shaped small enough to pass for a grain. That is why the two sets of numbers track each other so closely, and why swapping couscous for rice changes your fructan load while swapping it for spaghetti does not.

Is pearl couscous low FODMAP?

Pearl couscous, sold as Israeli or giant couscous, is the same wheat dough in larger balls, and it has no separately tested serve in this guide. Judge it by weight rather than by counting pieces, since the pearls are heavier than they look in a bowl. If you want certainty at a full bowl, use a grain that is rated green at that size instead.

What can I use instead of couscous in tabbouleh?

Quinoa is the closest match in texture and holds a much larger portion, so the salad can be built to the usual proportions. Millet and buckwheat both work if you like a nuttier grain. Whichever you pick, tabbouleh is mostly parsley in the original anyway, and pushing the herb ratio up is the easiest way to make a small measured grain go further.
