Is bread (rye) low FODMAP?
Fructans are doing this, and rye grain carries a lot of them. Half a slice holds 0.18 g, already past the 0.1 g mark where a portion counts as moderate, and the whole slice doubles that to 0.36 g, over the 0.3 g line for high. Is pumpernickel or dark rye bread low FODMAP?
Neither has a separately tested serve here, so the figures on this page are the closest guide available. Pumpernickel is a very dense, long-baked rye, which means even a thin slice weighs a good deal, and weight is what the rating follows. Cut it thinner than you would cut a sandwich loaf, and judge the piece by its weight rather than by counting slices.
Why does rye bread bloat me when white bread does not?
Fructans, and the awkward part is which loaf holds more. A single rye slice is red on its own, while white wheat bread is rated green at its tested serve, so the pale soft loaf that health advice steers you away from is the easier one on this diet. Colour and fibre tell you nothing about fermentable carbohydrate.
Does rye contain gluten?
Yes. Rye is a close relative of wheat and contains gluten, which puts it out of reach with coeliac disease. Gluten is not why it rates red here, though. That is fructans, a fermentable carbohydrate that happens to live in the same grains. Someone who reacts badly to rye bread but has had coeliac disease ruled out is usually reacting to the fructans instead.
