Cheese (Parmesan)

TLDRLast updated 3 September 2026

Parmesan behaves less like a dairy food than like a seasoning, and its lactose figure says so: a quarter cup grated, 40 g, records 0.01 g and rates green. That is the lowest reading of any cheese in the guide. A dish takes salt, savour and richness from it without the milk sugar a sauce would bring.

Is cheese (parmesan) low FODMAP?

Lactose is a water-soluble sugar, and parmesan is the driest cheese most kitchens keep: a year or two in a maturing room drives off water and leaves a hard, crystalline block. Whatever milk sugar the curd began with has had that entire stretch to be worked through by the cultures inside it. The tested quarter cup lands at 0.01 g, a fiftieth of the 0.5 g point at which lactose starts counting against a portion. For scale, the same measure of ice cream carries 0.75 g.

Cheese (Parmesan) and IBS: what to know

Trouble with parmesan is almost never the cheese itself. It arrives grated over dishes built on things that do carry FODMAPs: a plain parmesan risotto is rated red in our guide because of the stock and onion underneath it, and alfredo sauce sits at amber on the strength of its cream. Ordering pasta and asking for cheese on top is a different decision from ordering the sauce. If a hard cheese still bothers you at this sort of amount, fat density is a likelier culprit than a hundredth of a gram of milk sugar.

Gut-friendly ways to eat cheese (parmesan)

A quarter cup grated is a lot of parmesan once you think of it as seasoning rather than as cheese, and it will finish a bowl of pasta for two. Reach for it where a recipe wants depth and you would otherwise use garlic or a stock cube: over gluten-free pasta, stirred into polenta, shaved across salad leaves, or melted into a plain tomato base. Keep the rind as well, dropped into a soup while it simmers and fished out before serving, since it lends savoury body without adding bulk.

Frequently asked questions

Does parmesan have less lactose than cheddar?

On our figures yes, though both are traces: the tested quarter cup of parmesan records 0.01 g, while cheddar records 0.02 g at two slices. Parmesan spends longer maturing and finishes drier, which accounts for the gap. At this scale the choice between them comes down to flavour and to how much you will realistically eat, not to milk sugar.

How much parmesan can I put on a bowl of pasta?

A quarter cup grated is what the data covers, and that is more than most people shake over a single bowl. Nothing beyond it has been measured, so treat it as the amount you know rather than as a wall someone has proved is there. What sits under the cheese decides the FODMAP load of that plate far more than the cheese does.

Is pre-grated parmesan low FODMAP?

Shaker tubs are usually cheese plus an anti-caking agent such as cellulose or potato starch, neither of which is a FODMAP. Our figure describes the cheese on its own, so the label is what to read: some products blend in other cheeses, flavourings or milk solids, and those change what you are actually eating. Fresh-grated from a wedge removes the question entirely.

Can I use parmesan instead of onion and garlic for flavour?

That is its best use on this diet. Parmesan supplies glutamate-rich savouriness, the quality people are chasing when they soften onion at the start of a recipe, and it does it without fructans. A crust of it on baked vegetables, or a spoonful whisked into a dressing, gives a dish somewhere to go when the usual aromatics are off the table.
