Cabbage (Savoy)
Vegetables · Cruciferous
Half a cup of shredded savoy, 45 g, is rated green; one cup, 100 g, is rated red, with four FODMAP groups climbing together and mannitol in front at 0.33 g. Savoy is the tighter cabbage. A larger portion of common green cabbage is rated amber rather than red, so the two heads are not interchangeable in a braise.

Breakdown for 0.45 cups
Is cabbage (savoy) low FODMAP?
Four groups are in play at once. In the green half cup, mannitol leads at 0.15 g, still under the 0.2 g point where a polyol starts to weigh, with fructans at 0.12 g, sorbitol at 0.08 g and GOS at 0.06 g behind it. Double the shredded volume and each roughly doubles: mannitol to 0.33 g, fructans to 0.27 g, sorbitol to 0.18 g, GOS to 0.13 g. Each figure stays below the level that would rate that group high on its own, and the cup is rated red anyway. Four groups over the line at once is a heavier ask than one group over it twice.
Cabbage (Savoy) and IBS: what to know
Savoy collapses in the pan. A cup of raw shredded leaves cooks down to a couple of forkfuls, so the red portion arrives looking like a modest side, which is a good reason to weigh it once and calibrate your eye. Boiling and draining takes a little of the load off, because all four of these groups dissolve in water, but braising is what savoy is best at and braising keeps every bit of it in the dish with the butter. Whole leaves are the other trap: one stuffed cabbage roll uses a leaf considerably bigger than half a cup shredded.
Gut-friendly ways to eat cabbage (savoy)
Half a cup shredded is enough to line a bowl of soup or ribbon through a plate of potatoes, so use savoy for its flavour and let something else supply the volume. Bok choy braises much the same way at a full cup chopped and holds its green rating, and kale gives you a crinkled green leaf for a side dish. When you want cabbage in quantity, common green cabbage has the larger tested serve of the two and shreds, chars and slaws just as well. For stuffed leaves, blanch one leaf per person and pad the filling with rice and mince.
Frequently asked questions
Is savoy cabbage lower FODMAP than regular cabbage?
The other way round. Savoy reaches a red rating at one cup shredded, while common green cabbage is rated amber at a portion half again as large. Both carry the same four groups, savoy simply carries more of them per gram, with mannitol making most of the difference. If a recipe calls for cabbage and you want a proper helping, the plain green head is the one to buy.
How much savoy cabbage can I eat with IBS?
Half a cup shredded, 45 g, is the green amount, and a cup at 100 g is rated red. Three-quarters of a cup sits between the two and has not been measured. Because savoy wilts so far, a portion is much easier to judge before cooking than after, and half a cup of raw shreds is about two thirds of a mug loosely packed.
Are stuffed cabbage rolls low FODMAP?
The cabbage alone can push a roll over. A large savoy leaf is a bigger piece of vegetable than the green portion, and most fillings sit on a base of onion and garlic before the rolls are baked in a tomato sauce. Using one smaller inner leaf, a filling built on rice, mince and herbs, and garlic-infused oil in place of the base keeps the dish inside sensible territory.
Why does savoy cabbage cause bloating and cramps?
Mannitol and sorbitol are poorly absorbed sugar alcohols, so what is not absorbed holds water in the bowel before bacteria ferment it. That mix can produce urgency and cramping rather than plain wind, which is a different experience from the gassiness brassica fibre causes on its own. Some rumbling after cabbage is ordinary fermentation, so it is pain and distension, not noise, that suggests the helping was too big.
