Is beetroot (beet) low FODMAP?

Beetroot is almost never served in countable slices. Juice is the sharpest version of the problem, because a glass takes several beets and leaves the fibre behind in the pulp. What changes is the brine, which is often sweetened, so check the label for high fructose corn syrup and for onion in the spice mix. Why does beetroot turn urine pink?
That is betanin, the pigment that makes beetroot red, passing through unchanged. It is common, harmless, and unrelated to FODMAPs or to how well you handled the portion; it can show up after as little as a couple of slices. Where you are genuinely unsure whether you are seeing pigment or blood, ask your GP rather than assuming it was the salad.
